Quick apps were in full screen. from 27th there is permanent navigation and it cannot be minimized or removed sitting on top of APPs impacting overall UI/UX of the apps. need support on this case.

I wasn’t able to find documentation describing a setting to hide or minimize the navigation over an app, or anything noting a change to it. If you’re using the desktop app, though, the documentation notes that an open app can be used in a session tab, including full-screen and side-by-side with chat, so that may get you back to a full-screen view.
Are you seeing this in the desktop app or in the web version, and is it when you open the app from within Quick or from its published link? That will help narrow down whether the full-screen option applies to you. Here’s the documentation I was looking at: Apps in Amazon Quick.
